History:

The history of Sauerbraten traces back centuries, with its origins rooted in the traditions of German cooking. The name "Sauerbraten" translates to "sour roast," reflecting the dish's characteristic tangy flavor profile. It was originally created as a method of preserving meat in the days before refrigeration.

In medieval times, when refrigeration was nonexistent, meat had to be preserved through various methods to ensure it would last. Marinating meat in vinegar and spices was a common practice, as it not only helped tenderize tougher cuts but also imparted a unique flavor. Sauerbraten developed as a result of this preservation technique, becoming a popular dish in German households.

Over time, Sauerbraten evolved from a necessity to a culinary tradition, with each region of Germany adding its own twist to the recipe. The marinade ingredients can vary depending on the family recipe or regional preferences, but the essence of Sauerbraten remains the same: tender, succulent meat infused with a delightful tanginess.

Today, Sauerbraten is celebrated as a symbol of German gastronomy, cherished for its robust flavors and cultural significance. It continues to be a beloved dish, passed down through generations and enjoyed by people around the world who appreciate the rich tapestry of German cuisine.

  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 6-8 whole cloves
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

For the Gravy:

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups beef broth
  • Salt and pepper to taste

For Serving:

  • Potato dumplings (Kartoffelknödel) or mashed potatoes
  • Red cabbage (Rotkohl)

Instructions:

Marinate the Beef:

  • In a large bowl, combine the red wine vinegar, water, chopped onion, carrots, celery, garlic, bay leaves, cloves, peppercorns, mustard seeds, salt, and sugar. Mix well.
  • Place the beef roast in the marinade, ensuring it's completely submerged. Cover and refrigerate for at least 2 days, turning the meat occasionally.

Cook the Sauerbraten:

  • After marinating, remove the beef from the marinade and pat dry with paper towels.
  • In a large Dutch oven or roasting pan, heat the vegetable oil over medium-high heat. Brown the beef on all sides until nicely seared.
  • Preheat the oven to 325°F (165°C).
  • Pour the marinade over the beef and cover the pot. Transfer to the preheated oven and cook for about 3-4 hours, or until the meat is tender and can be easily pierced with a fork.

Make the Gravy:

    • In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, until the mixture turns golden brown and smells nutty.
    • Gradually whisk in the beef broth, stirring constantly to prevent lumps. Cook until the gravy thickens, about 5-7 minutes. Season with salt and pepper to taste.
